Rice and Peas Recipe
Ingredients
- 1 can red kidney beans, drained and rinsed
- 1 cup long grain rice
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup coconut milk
- 1 1/4 cups water
Instructions
- In a large pot, combine the beans, rice, onion, garlic, thyme, salt, and pepper.
- Add the coconut milk and water to the pot and stir well to combine.
- Cover the pot and bring the mixture to a boil over high heat.
- Reduce the heat to low and simmer the rice and peas for 20-25 minutes, or until the rice is cooked and most of the liquid has been absorbed.
- Fluff the rice with a fork and serve hot with your favorite Jamaican entree.
