  1. In a large pot, combine the beans, rice, onion, garlic, thyme, salt, and pepper.
  2. Add the coconut milk and water to the pot and stir well to combine.
  3. Cover the pot and bring the mixture to a boil over high heat.
  4. Reduce the heat to low and simmer the rice and peas for 20-25 minutes, or until the rice is cooked and most of the liquid has been absorbed.
  5. Fluff the rice with a fork and serve hot with your favorite Jamaican entree.
