  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the grated potatoes, brown sugar, flour, baking powder, cinnamon, nutmeg, and salt.
  3. Add the coconut milk, melted butter, vanilla extract, and raisins (if using) to the bowl. Mix well to combine all the ingredients.
  4. Pour the mixture into the greased baking dish and spread it evenly.
  5. Bake in the preheated oven for about 1 hour or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let it cool for a few minutes before serving.
  7. Slice the potato pudding into squares or wedges and serve warm or at room temperature.
