Jerk Chicken

Jerk chicken is a spicy and flavorful dish from Jamaica. The chicken is marinated in a mixture of spices and then grilled or baked until tender and juicy.

  1. In a large bowl, whisk together the olive oil, brown sugar, soy sauce, vinegar, lime juice, allspice, thyme, cinnamon, nutmeg, cayenne pepper, black pepper, and salt.
  2. Add the chicken to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 1 hour, or up to overnight.
  3. Preheat the grill or oven to 375°F.
  4. Remove the chicken from the marinade and place on the grill or in a baking dish. Discard any remaining marinade.
  5. Grill or bake the chicken for 30-40 minutes, or until cooked through and the juices run clear.
  6. Serve hot with rice and peas or your favorite side dish.
