Jerk Chicken

Jerk chicken is a spicy and flavorful dish from Jamaica. The chicken is marinated in a mixture of spices and then grilled or baked until tender and juicy.
Ingredients
- 1 whole chicken, cut into pieces
- 2 tbsp olive oil
- 2 tbsp brown sugar
- 2 tbsp soy sauce
- 2 tbsp vinegar
- 2 tbsp lime juice
- 1 tbsp ground allspice
- 1 tbsp dried thyme
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp cayenne pepper
- 1 tsp black pepper
- 1 tsp salt
- 4 cloves garlic, minced
- 1 onion, chopped
Instructions
- In a large bowl, whisk together the olive oil, brown sugar, soy sauce, vinegar, lime juice, allspice, thyme, cinnamon, nutmeg, cayenne pepper, black pepper, and salt.
- Add the chicken to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 1 hour, or up to overnight.
- Preheat the grill or oven to 375°F.
- Remove the chicken from the marinade and place on the grill or in a baking dish. Discard any remaining marinade.
- Grill or bake the chicken for 30-40 minutes, or until cooked through and the juices run clear.
- Serve hot with rice and peas or your favorite side dish.
