  1. Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear.
  2. In a medium saucepan, combine the rice, coconut milk, water, ginger, garlic, and salt and bring to a boil over high heat.
  3. Reduce the heat to low, cover the pan with a tight-fitting lid, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
  4. Remove the pan from the heat and let stand, covered, for 5 minutes.
  5. Fluff the rice with a fork and stir in the chopped cilantro.
  6. Serve hot.
