  1. Soak the saltfish in water overnight to remove excess salt. Rinse and drain the fish.
  2. Boil the saltfish in water for 20 minutes, then drain and flake the fish.
  3. Heat the oil in a pan over medium heat. Add the onion, bell pepper, tomato, garlic, and scallion, and cook for 2-3 minutes.
  4. Add the flaked saltfish to the pan and cook for another 2-3 minutes.
  5. Add the ackee to the pan and gently stir to combine. Cook for 1-2 minutes until the ackee is heated through.
  6. Serve hot with boiled green bananas or dumplings.
