Ackee and Saltfish Recipe
Ingredients
- 1 can ackee
- 1/2 lb saltfish (cod)
- 1 onion, chopped
- 1/2 bell pepper, chopped
- 1/2 tomato, chopped
- 2 cloves garlic, minced
- 2 tbsp oil
- 1 tsp black pepper
- 1 scallion, chopped
Instructions
- Soak the saltfish in water overnight to remove excess salt. Rinse and drain the fish.
- Boil the saltfish in water for 20 minutes, then drain and flake the fish.
- Heat the oil in a pan over medium heat. Add the onion, bell pepper, tomato, garlic, and scallion, and cook for 2-3 minutes.
- Add the flaked saltfish to the pan and cook for another 2-3 minutes.
- Add the ackee to the pan and gently stir to combine. Cook for 1-2 minutes until the ackee is heated through.
- Serve hot with boiled green bananas or dumplings.
